Woolacombe Riding Stables is highly recommended.   They’re British Horse Society and Pony Club approved. Their beach rides are superb and so are the scenic rides.  Beach rides are early morning along 3 miles of sandy beach for experienced riders only. Lovely, forward going horses and the staff are very friendly.
